Have you recently become a vegan? Do you crave the baked goods that you used to eat? If so, don't despair. There are plenty of ways to bake vegan.

The Minimalist Baker's Everyday Cooking by Dana Shultz provides both cooking and baking recipes. The book contains a resources section that gives you directions for making some of the vegan baking basics: flax eggs, DIY almond milk, coconut whipped cream, gluten-free flour blend and vegan Parmesan. In the baking section, Shultz provides recipes for the following delicious baked goods: one-bowl jumbo chocolate chip cookies, blackberry custard pie, one-bowl vegan tiramisu cake, apricot hand pies, pumpkin apple upside-cake and vegan vanilla cupcakes. Some of her recipes call for vegan butter and chocolate. 

In The Joy of Vegan Baking, Colleen Patrick-Goudreau starts by introducing the reader to suggestions for replacing eggs, cow's milk and butter. Suggestions for replacing eggs include: vinegar and baking soda, ground flaxseed, ripe banana and silken tofu. Alternatives to cow's milk include: almond milk, rice milk, oat and hazelnut milks, cashew milk, soy milk and coconut milk. Her cookbook provides recipes for muffins, biscuits, scones, sweet and savory quick breads, cakes and cupcakes, pies and tarts, brownies and bars, and crumbles and cobblers. 

In Chloe's Vegan Desserts, Chloe Coscarelli starts her book by providing must have ingredients for a vegan pantry. She also offers soy-free baking and sugar-free baking options. Some recipes featured are New Orleans beignets, apple cider doughnut holes, animal cookies, mojito chocolate chip cookies, chocolate hazelnut gelato, classic crème brûlée, frozen mocha latte, peanut butter chocolate chip milkshake, chocolate sauce and vanilla pastry creme. 

In Vegan Cookies Invade Your Cookie Jar by Isa Chandra Moskowitz, Isa provides basic ingredients that you need to have in your pantry and solutions for what to do when your cookies don't come out just the way that you want them to. She also offers classic cookie recipes, such as chocolate chip cookies, oatmeal raisin cookies and lemon bars. Feel like being adventurous? Try applesauce softies and spiced sweet potato blondies.

In Sticky Fingers' Sweets 100 Super-Secret Vegan RecipesDoron Petersan provides a chapter on the basicshow to bake and what ingredients to use. She also provides a list of websites that the reader can use to search for vegan-specific items that may be difficult to find. She provides the recipes of the trifecta that is the three recipes that built her bakery: cowvin cookies, little devils and sticky buns. She also provides recipes for the cupcakes that won prizes on Cupcake Wars: the George Caramelin, Gilbert Ganachefried, Working Blue and Strawberry Daiq-kiwi cupcakes. Some other delicious recipes to try are key lime pie, chocolate raspberry cheesecake, fruit tarts, red velvet cake and tiramisu.
